Ports, Pots and Entrepôts: A Pilgrimage of Food via History, Culture and Trade

For many thousands of years the Mediterranean Sea has been a nexus of global commercial trade. Our tour takes in three of its major trading ports; Naples, Genoa and Marseille. 

We’ll explore each city’s cuisine in the context of its maritime history and learn how and why the ingredients that flowed in and out of these ports, both framed and formed the dishes that define them today. 

We’ll learn why pizza is THE iconic food of Naples, why merguez sausages and couscous are huge in Marseilles and why the food of Genoa is uniquely different to the rest of Italy.

Accompanied by award-winning food and travel writer, Lucy Malouf, the history and food culture of each port city will be brought to life by local specialist culinary guides and historians.

Pompeii walking tour with focus on the day-to-day life of the Romans. Lunch at Caupona, which recreates Roman cuisine by following the recipes of 1st century gourmet, Marco Gavius Apicio. Visit Gragnano, one of the original pasta towns. See original artisanal pasta being made. Drive to Sorrento and enjoy a Neapolitan gelato before cruising back across the Bay of Naples to the hotel.

On a walking tour of Naples trace the culinary influences of Greeks, Romans, Normans, Arabs, French and Spanish. Visit traditional food shops in the old town, see the oldest coffee shop in Naples and visit churches, monasteries and convents, the original source of delicious traditional pastries. Explore the monumental quarter and sample taralli. Dinner at the historic La Taverna Dell’ Arte.

Drive north along the coast to Minturno, a Roman town on the Appian Way. Continue via Monte Cassino to Rome with various options for lunch along the way. Take the train from Rome to Genoa. Arrive early evening and transfer to the Hotel Continental and dinner.

Explore Genoa’s old port with culinary guide Francesca Assandri. Take a local train to Camogli, a fishing town along the coast. Learn of the history of focaccia, which originated with the Etruscans, but is widely associated with Ligurian cuisine. Lunch at a coastal restaurant with focaccia al formaggio. Return to Genoa and at leisure.

On a day’s walking tour, explore Genoa’s nautical and culinary history. Visit the House of Christopher Columbus, the Cathedral of Saint Laurence and see the Commandery of the Order of St John. Learn about seasonal products and local seafood with tastings. Visit pastry shops to taste marzipan, pan dolce and candies with rose syrup. Explore the ornate, historic market before a Ligurian dinner.

Drive to Marseille, stopping along the Ligurian coast at Noli to visit an orange flower water distillery. Continue to the town of Finalborgo, Slow Food centre and the bitter orange drink, Chinotto. Lunch at leisure, then continue along coast to the south of France, to arrive mid-afternoon and meet with local guide. Dinner at Mouné, a contemporary Lebanese restaurant with Provencal touches.

Explore the varied history and flavours of Marseille. Taste Corsican and Armenian charcuterie, Algerian bradj (date bars) and madjouba crêpes, West African pastels and bissap (hibiscus drink) and Tunisian citronade, pastries and mint tea. Visit the fish market, the port then weave through Noailles and the city centre. Enjoy lunch at Boite a Sardines and later, an apero at La Caravelle.

Take the ferry past Marseille’s waterfront to L'Estaque, a small village fishing port. Visit its traditional snack bars serving chickpea fritters, panisses, and chichis fregis (chickpea doughnuts). Stroll to see Cézanne’s studio. Visit the excellent MUCEM, the first museum dedicated to Mediterranean cultures. Take part in a pastis making class. Farewell dinner at Chez Les Galinettes.
